CHICKEN CHATPATA

Ingredients

750 grams chicken, cut into 2 inch pieces on the bone
3 tbsps oil
2 tbsps finely chopped garlic
2-3 green chillies, chopped
1 inch ginger, finely chopped
2 large onions, finely chopped
Salt to taste
2 large tomatoes, finely chopped
1 large green capsicum, finely chopped
½ tsp turmeric powder
½ tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
2 tsps chaat masala
2 tbsps red chilli paste
2 tbsps cashew nut paste
3 tbsps chopped fresh coriander leaves + for garnish
½ lemon
To serve
Paranthe as required

Method

1. Heat oil in a pan, add garlic, green chillies, ginger, onions and salt and sauté till the onion turns golden brown.
2. Add tomatoes, mix and sauté till they turn soft and pulpy. Add green capsicum and sauté for 1-2 minutes.
3. Add turmeric powder, cumin powder, coriander powder, garam masala powder and chaat masala and mix well. Sauté for 1-2 minutes.
4. Add red chilli paste and cashew nut paste and sauté for 1-2 minutes.
5. Add chicken and sauté on high heat for 3-4 minutes. Add 1 cup water, mix, cover and cook for 10-15 minutes.
6. Add coriander leaves and squeeze the juice of lemon and mix well.
7. Garnish with coriander leaves and serve hot with paranthe, onion rings and lemon wedges.
