Chicken dum biryani. This can be a one dish meal. Biryani is made is different ways. This is one of the chicken recipes in which chicken and rice is steamed. This is a very aromatic and delicious Mughlai recipe. We are making it in easy way in cooker, but it will have perfect dum biryani style texture, taste and look. Let’s learn to make chicken dum biryani.

Ingredients:
• 250 gm Chicken
• 1/2 tsp Turmeric powder
• 1 tsp Red chili powder
• 1/2 tsp Biryani masala
• 1 tsp Coriander powder
• 2~3 Green chilies
• Salt to taste
• Finely chopped Coriander leaves
• Roughly chopped Mint leaves
• 1/2 cup Curd
• 2 cups Basamati rice
• 3~4 cups Water
• 2 tsp Oil
• 1/2 tsp Cumin seeds
• Bay leaves
• Star anise
• Cinnamon
• Black cardamom
• 4~5 Cloves
• 4~5 Black peppercorns
• Finely chopped Onion
• 1 tbsp Ginger-Garlic paste
• 1/2 tsp Biryani masala
• 1 tbsp Red chili powder
• 1 tsp Coriander powder
• A little Salt
• 1~2 tsp Water
• 1 1/2 cup Water
• A little Salt
• 2~3 tsp Ghee
• Saffron milk

Method:
• Wash chicken really good 3-4 times and drain all the water from it.
• Add turmeric powder, red chili powder, biryani masala, coriander powder, green chilies, salt,
coriander leaves, mint leaves, curd and mix everything well together.
• Cover and rest the chicken to marinate for at least 30 minutes.
• You can marinate the chicken overnight too if possible.
• Wash rice really good 3-4 times and soak it in enough water for at least 30 minutes.
• Drain all the water from the soaked rice and keep it aside.
• Heat up oil in cooker and add cumin seeds.
• When cumin seeds splutter add bay leaves, star anise, cinnamon, black cardamom, cloves,
black peppercorns and mix well.
• Add onion and fry until it turns light golden.
• Add ginger-garlic paste, biryani masala, red chili powder, coriander powder, salt and fry
everything well together.
• Add coriander leaves, mint leaves and mix well.
• Add marinated chicken and mix well.
• Cover and cook for 20-25 minutes.
• Remove the lid and mix well at the intervals.
• If needed, you can add a little water at the interval.
• When the chicken is almost cooked around 80%, add water and soaked rice.
• Spread rice well and add water, salt, ghee.
• Close the lid and cook on medium to high heat until just 1 whistle.
• Remove the lid and check.
• Add saffron milk and mix well.
• Chicken biryani is all ready to serve.
