Ingredients

1 pound skinless, boneless chicken breast

2 teaspoons olive oil

1 cup chopped onion

1 ½ teaspoons ground cumin

½ teaspoon salt

¼ teaspoon ground cinnamon

3 garlic cloves, minced

1 cup bottled salsa

⅓ cup golden raisins

¼ cup slivered almonds, toasted

¼ cup chopped fresh cilantro

Fresh cilantro sprigs (optional)
Directions
Step 1
Place chicken in a food processor; pulse until ground.

Step 2
Heat oil in a large nonstick skillet over medium-high heat. Add onion, and cook for 3 minutes, stirring occasionally. Add chicken, cumin, salt, cinnamon, and garlic, and cook for 3 minutes or until chicken is done, stirring frequently. Stir in salsa and raisins. Cover, reduce heat, and simmer for 5 minutes or until thoroughly heated. Stir in almonds and cilantro. Garnish with cilantro sprigs, if desired.

Chicken and rice heart healthy

INGREDIENTS
2 teaspoons Olive oil
4 Boneless Chicken breast halves
1 large Onion chopped
1 teaspoon Minced garlic bottled or 2 medium cloves minced
8 ounces Pre sliced mushrooms
1 Cup Fat free low sodium chicken broth
1/2 Cup Dry white wine
1/4 teaspoon Salt
1/4 teaspoon Dried thyme
1/8 teaspoon Dried basil
3/4 cup Uncooked white rice

INSTRUCTIONS
1. In large skillet, heat oil over medium high heat, coating bottom. Cook chicken 2 minutes per side or until lightly brown but not done. Transfer to plate

2. In same skillet, stir together, onion and garlic. Cook 2 minutes. Add mushrooms. Cook 3-4 minutes until onion is soft, stirring occasionally.

3. Pour broth and wine into skillet, scrape to dislodge any bits. Stir in salt, thyme, basil. Increase heat and bring to a simmer.

4. Stir in rice. Top with chicken. Return to simmer, reduce heat and simmer covered for 15-20 minutes until chicken no longer pink and rice is tender.
