Tired of healthy desserts that taste like they belong at Chum Bucket? Here are 3 of my favorite vegan dessert recipes that are easy, healthy, and don’t need to be baked! I tried to use ingredients that most of us would have in while in quarantine so that we can enjoy some wholesome sweets that make us feel good. I also talk a little bit about body image and weight gain during quarantine because I feel like it’s something important that’s on our minds right now. Thank you guys for watching! Recipes:
Chocolate Chip Cookie Dough:
-1/2 cup flour (almond, oat, buckwheat, whole wheat, etc.)
-1 tbsp dairy-free chocolate chips (you can sub sprinkles, cinnamon, or whatever else if you don’t like chocolate)
-1 tbsp date syrup (you can sub maple syrup, agave, honey, etc.)
-pinch of salt
-1 tsp vanilla extract
-1 tbsp plant milk
PB & Chocolate Nice Cream:
-2 frozen (ripe) bananas
-2-3 soft, pitted dates
-3 tbsp peanut butter (you can sub almond butter, tahini, cashew butter etc.)
-2 tbsp cacao or cocoa powder
-2 tbsp dairy-free chocolate (chopped)
Mini No-Cheesecakes:
For the crust:
-3-4 pitted dates (soaked)
-2 cups of nuts (I used a blend of walnuts, pecans, and almonds)
For the filling:
-equal parts coconut cream and dairy-free yogurt (I used roughly 1/2 cup each)
-1 cup of whatever berries you choose
-1 tsp date syrup (you can sub maple syrup, agave, honey, etc.)
-1/2 tsp lemon or lime
*This yielded about 8 servings using a standard cupcake tin)
