TAWA CHICKEN & SPICE MIXES

Ingredients
Fragrant Spices
Mace, जावित्री
Green cardamom, हरी इलायची
Star anise, चक्र फूल
Body Spices
Coriander seeds, धनिया की बीज
Cumin seeds, जीरा
Dry Red chillies, सूखी लाल मिर्च
Dry fenugreek leaves, कसूरी मेथी
Earthy Spices
Stone flower, दगड़ फूल
Black cardamom, बड़ी इलायची
Black peppercorns, बड़ी इलायची
Bay leaf, तेजपत्ता
For Tawa Masala
2 tbsp Black Peppercorns, काली मिर्च के दाने
1 tbsp Cumin seeds, जीरा
2 heaped tbsp Coriander seeds, धनिया की बीज
1 tsp Fenugreek seeds, मेथी दाना
2-3 Black cardamom, बड़ी इलायची
2 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
For Kadai Masala
8-10 Dry Red chillies, सूखी लाल मिर्च
2 tbsp Black Peppercorns, काली मिर्च के दाने
1 ½ tbsp Cumin seeds, जीरा
1 tsp Fennel seeds, सौंफ
2-4 Green cardamom, हरी इलायची
Salt to taste, नमक स्वादानुसार
For Handi Masala
10-15 gms Stone flower, दगड़ फूल
2-4 Black cardamom, बड़ी इलायची
2 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
2 tbsp Coriander seeds, धनिया की बीज
1 tsp Cumin seeds, जीरा
2-4 Cloves, लॉन्ग
2-4 Green cardamom, हरी इलायची
2 Mace, जावित्री
4-5 Dry Red chillies, सूखी लाल मिर्च
½ tbsp Black peppercorns, काली मिर्च के दाने
For Season The Tawa (optional)
Oil, तेल
Salt, नमक स्वादानुसार
For Tawa Chicken
1 ½ tbsp Oil, तेल
1 small size Onion, slice, प्याज
½ inch Ginger, julienned, अदरक
2 Green chillies, slit into half, हरी मिर्च
¼ cup Fresh Tomato puree, ताज़े टमाटर की प्यूरी
2 tsp Ghee, घी
½ small Tomato, sliced, टमाटर
¾-1 cup Chicken, cut into strips, चिकन
¼ medium Capsicum, julienned, शिमला मिर्च
Sal to taste, नमक स्वादानुसार
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Prepared Tawa Masala, तैयार किया हुआ तवा मसाला
few Ginger, julienned, अदरक
1 tbsp Butter, मक्खन
2 tbsp Coriander leaves, chopped, धनिया पत्ता
For Garnish
Onion, slice, प्याज
Tomato, slice, टमाटर
Ginger, julienned, अदरक
Lemon wedge, नींबू की फांक
Coriander sprig, धनिया पत्ता
Process
For Tawa Masala
In a pan, add black peppercorns, cumin seeds, coriander seeds, fenugreek seeds, black cardamom, bay leaf, cinnamon stick and salt dry roast on low flame until the spices turn aromatic.
Transfer it into a grinder jar and grind into a fine powder. Keep it aside for further use.
For Kadai Masala
In a pan, add dry red chillies, black peppercorns, cumin seeds, fennel seeds, green cardamom and salt
Dry roast on low flame until the spices turn aromatic.
Transfer it into a grinder jar and grind it roughly. Keep it aside for further use.
For Handi Masala
In a pan, add stone flower, black cardamom, bay leaf, cinnamon stick, coriander seeds, cumin seeds.
Add cloves, green cardamom, mace, dry red chillies, black peppercorns and salt dry roast on low flame until the spices turn aromatic.
Transfer it into a grinder jar and grind into a fine powder. Keep it aside for further use.
For Tawa Chicken
In a tawa, add oil once’s it’s hot add onion, ginger, green chilli, tomato puree and saute it well.
Add ghee and saute on high flame. Add tomato, chicken, capsicum and salt to taste.
Now add degi red chilli powder, prepared tawa masala and cook on high flame.
Add ginger, butter, coriander leaves and mix it well.
Garnish with sliced onion, tomato, ginger julienned, lemon wedge, coriander sprig and serve hot.
