Healthy Peanut Butter Oatmeal Cookies
2 Ripe Bananas, Mashed
1/3 C. Organic Crunchy Peanut Butter
2/3 C. Unsweetened Applesauce
1 Tsp. Vanilla
1/2 Tsp. Salt
1/2 Tsp. Cinnamon
1 1/2 C. Quick or Old Fashioned Oats
1/4 C. Nuts (I used dry pecans.)
1/4 C. Semi Sweet Chocolate Chips
1/4 C. Shredded Coconut
»Preheat the oven to 350 degrees. Mix together the bananas, peanut butter, applesauce, and vanilla. Add in the oats, nuts, chocolate chips, and coconut; mix until well combined.
»Spoon a rounded 2 tbsp. of the cookie mixture onto the non-stick baking sheet, leaving an inch or two between each and flatten slightly. I placed a few more chocolate chips on top of each cookie. Bake for 15-17 minutes and allow to cool slightly.
Coconut Oil Chocolate Fudge
1 cup coconut oil, melted
1/3 cup coconut milk
1/3 cup cacao or cocoa powder
1/3 cup honey
2 teaspoons vanilla extract
»Combine all ingredients in a bowl and mix until smooth and well mixed.
»Pour into a lined loaf 8×4 pan.
»Refrigerate overnight.
Baked Pears with Walnuts and Honey
› 2 large ripe pears
› 1/4 tsp ground cinnamon
› 2 tsp honey
› 1/4 cup crushed walnuts
»Preheat the oven to 350°F. Cut the pears in half and place on a baking sheet (I cut a sliver off the other end so they sat upright). Using a spoon, scoop out the seeds.
»Sprinkle with cinnamon, top with walnuts and drizzle 1/2 teaspoon honey over each one. Bake in the oven 30 minutes.
