| Black Bean and Corn Curry Quinoa Salad|
Yield 4 servings
Ingredients:
– 1 ½ cups cooked quinoa
– 1/3 cup black beans
– 1/3 cup corn
– ½ cup coconut milk
– 2 teaspoons agave nectar
Directions:
1. Combine all the ingredients in mixing bowl and stir to combine!
|Mediterranean Quinoa Salad|
Yield 4 servings
Ingredients:
– 1 ½ cups cooked quinoa
– 1/3 cup tomato, chopped
– 1/3 cup olives, chopped
– 1/3 cup onion, chopped
– ¼ cup olive oil
– ½ cup balsamic vinegar
– 1 teaspoon garlic powder
Directions:
1. Combine all the ingredients in mixing bowl and stir to combine!
