MEALS

Bruschetta Chicken

Ingredients:
Chicken Breast
Cherry Tomatoes
Balsamic Vinegar
Olive Oil/Olive Oil Spray
Basil
Garlic
Salt + Pepper

Directions:

-Preheat oven to 350.
-Line a baking sheet with tin foil.
-Place chicken on baking sheet and season with salt and pepper.
-Slice cherry tomatoes in rings and line on chicken. THE MORE THE BETTER. YUM YUM YUM. 😉
-Add 1/2 to a full garlic clove on top
-Pour Balsamic Vinegar over chicken (about 2 TBS)
-Spray with olive oil spray
-Bake 30 minutes
-Top with fresh basil and ENJOY!

Mango Salsa Chicken

Ingredients:
Chicken Breast
1 Mango
1 Green or Red Pepper
1/2 C Red Onion
1/2 of a Lime, Juice
Cilantro
Salt + Pepper

Directions:
Chicken
-Preheat Oven to 350
-Salt and Pepper Chicken and Bake for 30 Minutes
While Chicken is baking prepare the salsa

Salsa
-Chop Mango
-Chop Pepper
-Chop Onion
-Chop cilantro
-Mix all in a bowl and season with lime, salt and pepper.

Top Salsa on Chicken and Enjoy!
***Another mean idea is you can make tacos out of this! Just shred up the chicken and add chicken and salsa in a taco shell. You can also use lettuce shells for even less calories!***

Creamy Chicken

Ingredients:
Chicken Breast
Zucchini
Non-Fat Greek Yogurt
1 chicken bulion cube mixed with 1C water
Salt+Pepper
Rosemary, Thyme, Garlic ( additional seasonings)

Directions:

-Slice chicken into strips
-Cook over medium heat on the stove seasoning with salt, pepper, rosemary, thyme, and garlic
-In another pan, heat 1C water with 1 Chicken bulion cube
-Once heated add 1/2 C Non-Fat Greek Yogurt and mix.
-Add cooked chicken to the sauce
-Slightly cook zucchini noodles in another pan and add to the sauce and chicken.
-Serve and enjoy!

***I totally made this recipe up, so it is a bit different. HOWEVER the taste is OUT OF THIS WORLD!*** also, there is left over sauce sometimes.
