1. Bread Malai Roll
Preparation time: 15 minutes
Serves: 8-10 Rolls
For Rabri
1/2 liter Full Fat Milk
1/4 Cup or 4 tablespoon Milk powder
4 tablespoon Sugar
Saffron soaked in 1 tablespoon milk
1 teaspoon Cardamom powder
For filling
1/2 cup milk powder
1 tablespoon Ghee
2 tablespoon milk
1/2 cup Malai
2 tablespoon sugar
Method:
In a pan add milk, sugar & milk powder. Mix well so that no lumps are there
When milk comes to a boil, add saffron soaked milk (Soak a pinch of saffron in 2 tbsp milk). Stir well.
Cook it on high flame and stir continuously for 6-7 minutes or until milk reduces to half. Don’t make it too thick as once milk cools down, it will become even thicker
Add cardamom powder. stir and remove from heat.
Now in another pan heat 1 tsp Ghee or clarified butter. Add 1/4 cup malai or milk. Mix.
Add milk powder & sugar. Stir well so that no lumps are there.
Cook this until mixture becomes like a lump or dough. Let it cool down.
Take a bread slice. Trim the sides. And roll thin with a rolling pin.
Take some filling, give it a cylindrical shape and put it on the rolled bread and make rolls.
In a serving plate, put these rolls. Pour prepared rabri over it. Garnish with Some chopped pistachio and almonds.
2. Instant rasmalai | Bread rasmalai | quick rasmalai recipe | Rasmalai using bread | bread ki rasmalai
Ingredients:
1 Litre / 4 cups Milk
50g Sugar
A pinch of Saffron
Cashew, almonds, pistachio (2 tbsp each)
4-6 Bread slices
Method:
1. In a heavy bottomed pan add milk. Once it heats up. Remove 1/4
cup milk and add to a pinch of saffron. Let it soak until needed.
2. Boil the milk on low-medium flame. Stir in between. Boil until it
reduces to 1/2 of its quantity.
3. Now add saffron soaked milk. Some chopped cashews, pistachio
and almond.
4. Now cook it again on low-medium heat for another 5 minutes or until milk becomes thick or reduces to 1/3rd of its original quantity.
5. Add sugar. you can also add 1/2 tsp cardamom powder at this stage.
6. Stir until sugar dissolves completely.
7. Switch off the flame. Let the rabri cool completely
8. Now take bread slices and cut them round with a glass or a bowl.
9. Dip in rabri and take out in serving plate. Add some more rabri and serve chilled.
10. the instant rasmalai is ready to be served.
3. Shahi Tukda
Ingredients:
5-6 Bread slices
For Rabri:
1 litre Milk
3 tbsp Sugar
8-10 strands of Kesar
1/2 tsp Cardamom powder
For sugar syrup
1 cup sugar
1 cup water
1/2 tsp Cardamom powder
Ghee or Oil for frying
chopped cashew, almond and pistachio for garnishing
