Malunggay Oatmeal Cookies
Ingredients:
1 cup (225g) softened butter, unsalted
1/4 cup coconut sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla
1 cup all purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon (optional)
3 cups quick cooking oats
1/4 cup chopped walnuts
1/4 cup raisins
1/4 cup malunggay flakes
1/8 cup flax seeds
1/8 cup chia seeds
1/2 cup chocolate chips
Handful of dark chocolate callets (optional)
Bake in a preheated oven at 180C for 10-12 minutes
Vegan Oatmeal Cookies
Ingredients:
1 cup wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 tsp salt
1 cup coconut oil
1/2 cup honey
1/4 cup coconut sugar
2 tsp vanilla
2 cups quick cooking oats
1/4 cup cashew, chopped
1/4 cup almond, chopped
1/4 cup peanuts, chopped
1/4 cup walnut, chopped
1/4 cup raisins
1/4 cup chocolate chips
*Chill the mixture after combining all the ingredients just until the coconut oil has set a little and you can easily roll them into a ball.
Healthy Banana Oat Muffins
Ingredients:
1 1/2 cups oat flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
4 ripe banana
1/3 cup honey
1/2 cup coconut oil
1 tsp vanilla
1/4 cup dairy free chocolate chips
1/4 cup raisins
1/4 cup whole rolled oats
Topping:
coconut sugar
whole rolled oats
*The chocolate chips were coated with the dry ingredient mixture to prevent them from sinking at the bottom of each muffins.
Banana Oat Pancakes
Ingredients:
1 1/2 cup oat flour
1/2 tablespoon baking powder
1/2 tsp cinnamon
1/4 tsp salt
4 ripe bananas
2 tbsp coconut oil
1/4 cup honey
3 eggs
1 tsp vanilla
maple syrup or honey
