I hope you are all doing well. Welcome back to my channel and to another recipe video! This weeks video was a bit of a challenge to use up some odd fruit and veg. If you want to make these recipes at home, I have left all of the ingredients below.

RECIPES:
VEGGIE KATSU CURRY:
1 large white onion
2 carrots
2 garlic cloves
1 sweet potato
1 aubergine
2tbsp curry powder
1tbsp vegetable oil
1tsp turmeric
1 tsp sugar
1 tsp soy sauce
1 can of coconut milk (full fat)
1 tbsp cornflour if needed to thicken
200g panko breadcrumbs
1 egg or vegan plant based milk
100g plain flour
rice to serve
BUTTERNUT TOSTADAS:
1 butternut squash
1 red onion or 2 smaller onions
2 tbsp tomato puree
2 garlic cloves
1tbsp olive oil
2tsp paprika
1tsp cayenne pepper
6 tortilla wraps
1 can of black beans
garlic aioli or mayo
50g cheddar cheese
chilli flakes to taste
SAUSAGE BAKE:
6 vegetarian or meat sausages of your choice
2 parsnips
1 red onion or two small onions
2 potatoes
1/2 sweet potato (optional)
2 apples
1tbsp thyme leaves
200ml vegetable stock
1tbsp balsamic vinegar
PESTO LASAGNE:
1 red pepper
1 red onion
2 garlic cloves
2tbsp olive oil
2 aubergines
5 tomatoes
1 can of chopped tomatoes
1tbsp tomato puree
1tsp oregano
6-9 lasagne sheets
1 part white lasagne sauce (can make your own)
1 ball of mozzorella
50g vegetarian parmesan
1 jar of vegetarian pesto
ORANGE UPSIDE DOWN CAKE:
2 medium oranges
3/4 cup granulated sugar
4 1/2 tablespoons unsalted butter, cut into pieces
1/4 teaspoon kosher salt
for the cake:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup granulated sugar
3 large eggs, at room temperature
1 teaspoon pure vanilla extract
1 teaspoon grated orange zest
1 cup buttermilk, well shaken
APPLE AND PEACH CRUMBLE:
3 apples
3 peaches
2 nectarines
2tbsp sugar
juice from 1/2 lemon
180g plain flour
90g caster sugar
90g unsalted butter
50g flaked almonds
50g porridge oats
25g brown sugar
1tsp ground ginger
1tsp nutmet
brown sugar to sprinkle
