This roast chicken will please even the fussiest of eaters. It’s perfect all year round, but in winter serve it with roasted veggies – add them to the roasting pan and they’ll soak up all the flavours.

Ingredients:
2 tsp ground coriander
2 tsp fennel seeds
1 tsp ground paprika
1 tsp smoked paprika
½ tsp ground cumin
1 large whole chicken
10 garlic cloves
2 brown onion, rough sliced
10 baby carrots, peeled
2 lemons, halved
½ bunch oregano springs
½ bunch sage springs
½ bunch rosemary srings
1 tbsp dry thymes
1 garlic bulb, halved
2 tsp extra virgin olive oil
salt, to season
pepper, to season
Tip: Set chicken aside for 15 mins to rest.
