Kheer or Payasam is a type of pudding from the Indian subcontinent. It is made by boiling milk and sugar with one of the following: rice, broken wheat, millet, tapioca, vermicelli, or sweet corn. It is flavoured with desiccated coconut, cardamom, raisins, saffron, cashews, pistachios, almonds or other dry fruits and nuts.

Ingredients required for Semiya Payasam recipe | Seviyan Kheer | Vermicelli kheer :
1 Cup milk
½ Cup vermicelli
1 Tablespoon butter
Handful cashews
Handful raisins
1 Cup water
½ Cup sugar
1 Teaspoon vanilla extract
– Boil the milk and set it aside
– In a pan dry roast, the Vermicelli and transfer to a different dish
– In the same hot pan add a tablespoon butter and handful of cashews and raisins
– Once the raisins become bloated, transfer to a different dish and set it aside
– In the same hot pan add a cup of water, bring it to a boil
– Add the previously roasted vermicelli and mix well
– Once the vermicelli is soaked into the water, add ½ a cup of sugar mix well
– Add the previously boiled milk, mix well
– Add a teaspoon vanilla extract, mix well
– And finally, add the cooked cashews and raisins and mix well
This dish is best served while it’s warm.
When it cools down this dish will become thicker, so before consuming add some warm milk or microwave it and mix well.
