The classic steamer has a chimney in the center, which distributes the steam among the tiers.
Recipe:
For 2 KG Chicken- 6 Leg Quarters
Yogurt 125 gm
Ginger Garlic Paste 2 tsp
Salt 2 tsp OR To Taste
Red Chili Powder 2 tsp
Paprika Powder 2 tsp
Chaat Masala 2 tsp
Turmeric Powder 1 tsp
All Spices Powder 1 tsp
Coriander Powder 2 tsp
Orange Food Color 1 tsp
Vinegar 2 TBS
Soya Sauce 4 tsp
MIX ALL INGREDIENTS WELL
APPLY WELL ON CHICKEN PIECES
REFRIGERATE FOR 2 HOURS
After 2 hours
Heat Oil (Half Cup) In A Big Deep Pan
Add Chicken Pieces In The Pan
TURN ON FLAME ON MEDIUM FOR FIRST 10 MINUTES
PUT HEAVY WEIGHTS ON THE LID FOR THE PROPER STEAM
AFTER 10 MINUTES TURN FLAME ON LOW AND COOK FOR 20 MINUTES
AFTER 20 MINUTES TURN CHICKEN AND COOK FOR ANOTHER 30 MINUTES OR UNTIL DONE
