Idiyirachi or beef idichathu is known to be one of the specialties of Kerala cuisine. Usually, sun-dried beef is crushed/shredded and stirfried in coconut oil along with chilly flakes, ginger, garlic, garam masala, pepper powder and plenty of curry leaves until its dry and crisp.

–INGREDIENTS
** To cook the beef
Beef – 750 grams
Turmeric powder – 1/2 tsp
Chilli powder – 1 tsp
Pepper powder – 1 tsp
Garam masala – 1 tbsp
Salt
Lime juice – 1 tbsp

*To Fry
Coconut oil – 5 tbsp
Mustard seeds – 1 tsp
Garlic crushed (with skin) – 20 cloves
Ginger crushed – 2-inch piece
Green chilly – 4
Curry leaves – 3 sprigs
Shallot crushed – 300 grams
Turmeric powder – 1/2 tsp
Chilli powder – 1/2 tsp
Coriander powder – 1 1/2 tsp
Garam masala – 1 tsp
Salt
Pepper powder – 1 tsp
Fennel powder – 1 tsp
Chilli flakes – 1 1/2 tsp
