WELCOME BACK FRIENDS! I FIRST MADE THIS RECIPE IN THE SUMMER AND ITS BEEN A FAMILY FAVORITE EVER SINCE AND I WANTED TO SHARE. IT’S A ONE PAN MEAL UNLESS YOU WANT TO SERVE IT WITH RICE, PASTA, ETC. I LOVE RECIPES THAT ARE QUICK, EASY AND FULL OF FLAVOR.

CREAMY GARLIC MUSHROOM CHICKEN:

– 1 tbsp avocado oil
– 1 LB Boneless Chicken Thighs
– 3 Garlic cloves, minced
– 1 tsp paprika
– 1 tsp garlic powder
– 1 tsp oregano
– 1 tsp smoked paprika
– 1 tbsp butter
– salt and pepper to taste
– 8oz mushrooms
– 1/2 medium onion
– 1 1/2 cup heavy whipping cream
– 1/2 cup Parmesan cheese (a little extra for garnish )
– fresh basil to taste

Instructions:

1. Season chicken with oregano seasoning, paprika, garlic powder, salt and pepper.
2. In a skillet over medium heat, add avocado oil.
3. When skillet is hot, add your chicken and sear on both sides until brown. Cover with lid to cook chicken till food thermometer reads 165 degrees, don’t over cook. Remove from pan and let rest.
4. Add butter, mushrooms and sauté till almost soft then add the onion. Sauté for 2-3 minutes or until tender then add garlic, a pinch of salt and pepper and sauté for 1 minute.
6. Reduce heat to low and add heavy whipping cream and Parmesan cheese and simmer for 1-2 minutes or until your sauce starts to thicken. Taste and add salt if needed.
7. Add chicken back to the skillet and let it simmer for two minutes on low heat.

I have served this over cauliflower risotto and have also used low carb pasta.

*In the video I doubled the recipe as I was cooking 2.5lbs of chicken thighs.
