RECIPE:
Ingredients:
Biscuit Base
300 g Bourbon Biscuits
500 g Full Fat Cream Cheese
75 g Icing Sugar
300 ml Double Cream
1 tsp Vanilla Extract
Method:
In a Large Bowl/Stand Mixer, add your Cream Cheese, Icing Sugar and Vanilla and whisk till smooth.
Pour in the whip Cream in another bowl and whisk till thick.
Mix the whipping cream with the cream cheese mixture.
Split the Bourbon biscuit into half and knife out the cream.
Pipe the cheesecake mixture on the biscuit and cover it.
Leave the cheesecake sandwich to set in the fridge for 5-6 hours, or preferably overnight.
