Mud Pie Recipe:
8 oreos, crushed
1 – 2 tbsps melted butter
1/4 cup chocolate chips
1/3 cup heavy cream
5 scoops chocolate ice cream
whipped cream
In a food processor, add oreos and melted butter. Process until it looks like wet sand. Transfer to a small pie pan and press it down against the sides. It should stick easily. Freeze for 5-10 minutes until chilled.
In the meantime, make the chocolate sauce. In a small saucepan, add chocolate chips and heavy cream and stir until melted and combined.
Remove ice cream from freezer and let it thaw for about 5 minutes. Add scoops of ice cream into pie dish lined with oreos and spread ice cream into a smooth layer. Add the chocolate sauce and spread to cover the top. Put in the freezer and let it firm up for at least 2 hours to overnight. Once ready to serve, add whipped cream and more crushed oreos. Enjoy!
Key Lime Chia Seed Pudding Recipe
1/2 cup chia seeds
1/2 cup of your favorite yogurt (coconut is great!)
1/2 cup oat milk
zest of half a lime
juice from half a lime
In a large bowl, combine chia seeds, coconut yogurt, oat milk, lime zest and lime juice. Stir until combined. Let it bloom for 15 minutes and give it another stir. Put in the fridge for at least 1 hr to overnight. Enjoy with some crushed graham crackers. Stores up to 3 days.
Strawberry Liqueur Panna Cotta Recipe:
1 packet of unflavored gelatine (or 1 tbsp)
1/4 cup milk
1/3 cup sugar
2 1/4 cups half and half
1 tsp vanilla extract
In a bowl, add gelatine and milk and mix. Set aside so it can bloom.
In a saucepan, add sugar, half and half, and let it simmer on medium low heat until it starts to steam. When it does, turn off the heat and add vanilla extract and the bloomed gelatine. Mix well for a minute until it fully dissolves. Add to some oiled ramekins and put it in the fridge for 4 hrs to overnight. Serve with liqueur soaked strawberries.
To make the liqueur soaked strawberries:
6 large strawberries, sliced
1 tbsp sugar
2 tbsps liqueur
In a large bowl, combine strawberries, sugar, and liqueur. Let it sit for at least 15 minutes but it’ll get even better as it sits. Make it when you make the panna cotta and it should be ready and delicious!
