SHEH-KER-PAH-REH – Traditional Turkish Dessert

In this episode, I’d like to show you how to prepare ‘Sekerpare’, one of the popular desserts in the Turkish cuisine. It is so easy to prepare and there are many ways of preparing it. The only thing in common is, Sekerpare always must be dipped in sweet syrup after baking. In fact, it can even be called ‘cookie with syrup’. The syrup is usually prepared 3 to 3 – 1/2 ratio of sugar and water. But we definitely don’t want to eat that much sugar so add less sugar, and it still tastes great. It is up to you!

INGREDIENTS
FOR THE SYRUP:

1 and 1/2 cups Granulated Sugar
3 and 1/2 Cups Water
2 tbsp lemon juice

FOR COOKIES:

100 gr. (0,4 cup) margarine at room temp
2 tbsp vegetable oil
1 cup powdered sugar
1 egg
3 and 1/2 real tablespoonfull semolina
1 tbsp baking powder
1 package of vanilla sugar or 1/2 tsp vanilla extract
3 cups flour
16 to 18 hazelnuts

DIRECTIONS:

Preheat your oven to 175° C (350° F) and grease a baking sheet.
To make the syrup, combine 1 and 1/2 cups sugar and 3 and 1/2 cups of water in a pot, then mix and bring to a boil over
medium heat.
Meanwhile, toast the hazelnuts in a pan and set aside.
Sift the flour, semolina, vanilla, baking powder and a pinch of salt into a bowl and whisk.
When the syrup comes to a boil, add the lemon juice, reduce the heat and let simmer for 5 minutes while stirring. Then set aside.
Combine the margarine and vegetable oil in a bowl and sift the powdered sugar on top. Mix and beat well.
Add 1 egg (also the vanilla extract if using) and beat again until well combined.
Add the dry ingredients in two bathches and mix.
Gently knead the dough until all ingredients are combined.
Tear off walnut-size pieces of dough, roll each into a ball and place on baking sheet.
Repeat this process until all the dough has been used and formed.
Place a whole hazelnut on top of each and flatten the cookies slightly.
Then bake for 25-30 minutes in the preheated oven.
After removing from the oven, wait for about 1 minute then spoon the WARM syrup all over the HOT cookies, making sure you wet each and every cookie with the syrup.
Let cool completely then cover with plastic wrap and wait at least 3-4 hours before serving. (I like the taste better when refrigerated.)
Once all the syrup absorbed, enjoy your homemade
