FISH SAUCE CHICKEN (Gai tom nam pa)
INGREDIENTS:
4 lbs Pullet chicken (young hen), whole
4.5 quarts water
7-8 slices of galangal
2stalks lemongrass
1 tbsp Salt
1 tsp MSG
1/4 cup fish sauce
1/2 tsp turmeric powder, for color
2 Roma tomatoes, sliced
3 stalks Green onion, chopped
SAUCE INGREDIENTS :
15 fresh thai chilies, according to taste
1 tbsp cilantro stems
4-5 cloves garlic
5 tbsp Fresh squeeze lime juice
2 tbsp Coconut sugar
1 tbsp granulated sugar
4 tbsp Fish sauce
1 tsp MSG
