Chicken Karahi Recipe:
Chicken – 1 kg
Oil – ½ Cup
Black Cardamom – 3 nos
Bayleaf – 2 nos
Salt – 1 ½ tsp
Ginger Garlic Paste – 3 tbsp
Green Chilli (slit) – 6 nos
Tomato (halved) – 4 nos
Water – ½ Cup
Red Chilli Powder – 1 tbsp
Cardamom Powder – ¼ tsp
Coriander Powder – 1 tbsp
Cumin Powder – 1 tsp
Black Pepper Powder – 1 tsp
Kasuri Methi – 2 tsp
Curd – ½ Cup
Coriander Leaves (finely chopped) – 3 tbsp + for garnish
Ginger (julienne) – 1 tsp + For Garnish
Cooking Instructions:
1. Heat the oil in a pan and add the bayleaf and black cardamom. Add the chicken and salt. Fry it for 5 minutes or until it starts to change colour.
2. Add the ginger-garlic paste and green chillies and saute for a few minutes to remove the raw taste of the paste.
3. Add the water to the chicken. Place the tomatoes on top, cover and cook for 10 minutes on a low flame. Remove the skins from the tomatoes.
4. Add all the powdered spices and Kasuri methi, and mix well. Add the curd.
5. Cover and cook on a low flame for 15 minutes.
6. Add the coriander leaves and ginger juliennes. Simmer for a couple of minutes and then remove from the flame.
