Chilli Chicken Recipe in Tamil [Restaurant Style] | chili chicken recipe | Spice and Buds

Ingredients:-
– 500 Chicken
For Brining
– 1 tsp Salt
– 1 tbsp Vinegar
– 1 cup Warm Water
For Marination
– 1 ½ tsp Pepper Powder
– Salt
– 1 tbsp Soya Sauce
– 1 tbsp Ginger Garlic Paste
– 2 tbsp Corn Flour
– 2 tbsp Maida (or) All-Purpose flour
– 1 Egg White

– Oil (for frying)

For Chilli Chicken Preparation
– 3 tbsp Sesame Oil
– 1 tbsp Ginger (finely chopped)
– 1 tbsp Garlic (finely chopped)
– 1 tsp Celery (finely chopped)
– 6 No’s Green Chilli (chopped)
– Spring Onion (chopped)
– ½ Cup Capsicum
– ½ Cup Onion
– 1 tsp Vinegar
– 2 ½ tbsp Chilli Sauce
– 2 ½ tbsp Tomato Sauce
– 4 tbsp Soya Sauce
– ½ tsp Sugar
– 3 tbsp Slurry
Method:-
Clean and Cut the chicken thigh meat into bite-sized pieces. Now add in salt, vinegar and warm water as required. Set aside for 1 hour. After an hour wash it and drain out the water well. Doing this step will make the chicken juicy inside and crispy outside while frying the chicken.
Now marinate the chicken with pepper powder, salt, soya sauce, ginger-garlic paste, cornflour, Maida and egg white. Set aside for 30 Mins.
Meanwhile cut one capsicum and a medium-sized onion into square-shaped pieces, then chop some green chillies, spring onion and celery. Keep it aside.
After 30 mins heat a pan and add oil to it. Keep the flame on medium heat. Add chicken to the hot oil and fry it until it gets a light golden brown colour or 4 to 5 Minutes.
Now heat another pan and add sesame oil or any other refined oil. Sesame oil will give the exact Chinese flavour. Add in finely chopped ginger, garlic and celery. Stir once and add chopped green chillies and spring onion white part. Stir this for 2 to 3 Minutes.
Now add in soya sauce, tomato sauce and chilly sauce. Cook for 2-3 Minutes. Add capsicum and Onion along with a teaspoon of vinegar. Combine well and cook for 2-3 Minutes. Adjust the measurement of sauces as per your taste.
Now add fried chicken to this and mix well to combine then add some warm water along with a teaspoon of sugar. Allow it to boil and cook for 5 Mins. Sugar will help to balance the sour tastes of the sauces.
Finally, add some green part of spring onion, mix it once and switch off the flame.
