My version of Calderetang Manok, this dish is similar to chicken mechado in which the chicken is stewed in tomato sauce, soy sauce, lemon, bell pepper, onions and garlic. But what makes this difference? Chicken Caldereta has thicker and richer sauce because we add liver spread and shredded cheese. Serve, share and enjoy!
INGREDIENTS:
Servings : 4 – 5 people
– 1 1/4kg chicken, cut into pieces
– 1/4 cup soy sauce
– 2 tsp lemon or calamansi juice
– 4 drops of worcestershire sauce
– ground black pepper to taste
– 2-3 tbsp cooking oil
– 3 pieces potatoes, cubed
– 2 pieces carrots, sliced
– 1 medium size red bell pepper, sliced
– 2 tbsp butter or margarine
– 4 cloves garlic, peeled and crushed
– 1 medium onion, chopped
– 1/2 cup tomato sauce
– 1/2 chicken bouillon cube
– 75g liver spread
– 1/2 cup shredded cheese
– 140g pineapple chunk, drained the juice
– chili flakes or red chili, add more or less depending
on the desired level of spiciness
