Here’s the recipe:
RYE.P.A.
2 oz. (60ml) Rye whiskey
5 oz. (150ml) Fresh grapefruit juice
Grapefruit Zest
½ oz. (15ml) Cardamom Honey (3 parts honey, 1 part water, 3-4 Cardamon Pods)
IPA foam float (10 oz. (300ml) IPA, 1 oz. sugar, )
PREPARATION:
1. Create IPA foam float by cooking beer and sugar. Once cool, pour into whip cream dispenser and add ⅛ teaspoon of Xanthum Gum. Shake a lot and charge. Set aside.
2. Create honey mix by cooking Cardamon pods, 3 parts honey, and one part sugar. Allow 2 hours to cool and infuse.
3. In a shaker with ice, combine rye whiskey, grapefruit juice, and the honey mix. Shake well.
4. Strain mix into a serving glass and top with IPA foam. Garnish with a grapefruit peel and enjoy responsibly!
