Hope you enjoy today’s recipe ^_^! This week I’m sharing an easy Japanese chicken recipe for home cooking: Crispy Teriyaki Chicken! When I think of teriyaki chicken, the first flavor that comes to mind is sweetness. Although most teriyaki chicken recipes will tell you simmer the chicken and the sauce together in a pan, I personally like to cook them separately. This way, I can keep the chicken crispy and make the sauce thick and rich!

? 【INGREDIENTS】?
1 chicken thigh with skin
4 cloves of garlic thinly sliced
white sesame
sliced green onion
potato starch or corn starch
salt

[Sauce]
2 tbs soy sauce
2 tbs mirin
1 tbs brown sugar
1 tbs white sugar
1 tbs ketchup
1 tbs chopped garlic
1 tsp cinnamon
1 tbs water

? 【METHOD】?
1) Make shallow cuts and expand the meat layer so it’s even.
2) Pat dry the skin with a paper towel, sprinkle some salt on the skin and wait for a few minutes
3) Pay dry the skin one more time to absorb the moisture extracted by the salt
4) Coat the chicken with potato starch or corn starch thoroughly and remove the excess.
5) Heat a fry pan to medium, add enough oil to full cover the surface and fry some sliced garlic until it’s fragrant.
6) Remove the garlic from the pan, turn the heat up slightly, then lay down the chicken skin-side facing down.
7) Put a sheet of aluminum foil on top of the chicken then press down with an iron press or something heavy like a pot.
8) Grill for 5 minutes and check if the skin is golden brown and crispy (grill more if needed)
9) Turn it up-side-down and grill for 2~3 more minutes.
10) Remove from the pan and let the meat rest for 4~5 minutes
11) Mix all sauce ingredient in a small bowl and mix until blended.
12) Add the mixture in a fry pan and simmer until it’s thick.
13) Lay the chicken on top of some rice, cover with the teriyaki sauce and sprinkle some green onion + white sesame!
