Parsi Chicken Farcha Recipe:
Marination:
Chicken Drumsticks – 500 grams
Coriander Leaves – 1 Cup
Mint Leaves – ¼ Cup
Green Chilli – 3 nos
Salt – 1 tsp
Lemon Juice – 1 tbsp
Turmeric Powder – ¼ tsp
Red Chilli Powder – ½ tsp
Coriander Powder – 1 tsp
Cumin Powder – ½ tsp
Garam Masala Powder – ½ tsp
Ginger Garlic Paste – 1 tbsp
Other Ingredients:
Water – ¼ Cup
Eggs – 2 nos
Salt – A Pinch + A Pinch
Coriander Leaves (finely chopped) – 1 tbsp
Breadcrumbs – 1 Cup
Black Pepper Powder – ¼ tsp
Oil – For Deep-Frying
Cooking Instructions:
1. Grind all the ingredients for the marination into a smooth paste.
2. Make slits on the chicken pieces. Add the marination to the chicken and marinate for at least 30 minutes.
3. Add the chicken directly into a pan. Add a splash of water, cover and cook for 10 minutes, stirring occasionally. Remove the chicken pieces from the pan and allow to cool slightly.
4. Add the eggs to a bowl. Add salt and coriander leaves, and beat well.
5. Season the flour with salt and pepper. Coat the chicken pieces completely in the breadcrumbs and then in the egg mixture.
6. Deep fry them on medium-low heat until golden brown on all sides.
