A very simple and easy recipe which everyone can try. I guarantee it is delicious. Depending on your taste, you can adjust saltiness and sweetness. Otherwise, use the ingredients below and you will surprise your family member with an aromatic and mouthwatering chicken dish for dinner.
Ingredients:
3 pounds of chicken thighs
2-3 tsp of sugar
1 tsp of salt
1 tsp of chives
1 tsp of coriander
1 tsp of cumin
½ tsp to 1 tsp of turmeric for coloring
1/8 tsp of Kaffir Lime Leaf Powder (Citrus flavor)
½ cup of milk, low fat or whole milk or plain yogurt
1-2 tsp of ground black pepper
1-2 tsp of my “Sweet Chili Sauce”
3 tbs of unsalted butter

1.5 tbs of minced shallot
1 tbs of minced garlic

Note: tsp=teaspoon tbs=tablespoon
1 tsp of cornstarch mixture to thicken the sauce
(1 tsp of cornstarch, add 2 tbs of water)

Direction:

Cut chicken thighs into small chunks, 1.5 inch in length and 1.0 inch in width. I picked this size as it is easier to cook the meat evenly. Marinate the meat with the above ingredients, and let it sit for 15 minutes at least.
On a nonstick or regular stainless steal pan, add in two tablespoons of cooking oil. Add in 1.5 tbs of minced shallot, then 1 tbs of minced garlic. Add in the meat. Add in 3 tbs of unsalted butter. Sear on each side to obtain a nice golden brown around the edges. Close the lid and let it cook for at medium to low heat, allowing all the herbs to incorporate into the meat. This process takes about 10 minutes. Reduce the chicken for the last 5 minutes at high heat. Add cornstarch mixture to thicken the sauce and gives the dish a glace and appealing look. Add ¼ cup of roasted cashew nuts, and garnish with chopped parsley or cilantro to serve.
