Spicy couscous is a dish that is Ideal with grilled and roasted meats or as a vegetarian alternative.

Calories per serving: about 450 kcal.
Ingredients for 4 people:
250g of couscous (medium size)
250 ml of vegetable broth or meat juices (look at the manufacturer’s instructions)
1 teaspoon of tomato purée
2 peppers – red and yellow
1 corn can
4 spring onion stems
2 tablespoons of vinegar (rice vinegar)
3 tablespoons of olive oil or sunflower oil
1 tablespoon of curry paste, red, vegan (no prawns!)
1 tablespoon of soy sauce
Salt and pepper, chilli powder, cumin and a little sugar
Chives, parsley or spring onions (thin rings)
Pour the juices from the roast over the couscous and leave it to stand for 10 minutes. Add the liquid according to the manufacturer’s instructions. Quantities may differ by type and manufacturer. Add more liquid if necessary.
Meanwhile, wash and chop the vegetables and herbs. Mix the tomato purée, curry paste (vegans / vegetarians beware: it may contain shrimp, use more tomato purée if necessary), rice vinegar, oil and soy sauce with the couscous (works best if you use your hands).
Add the vegetables and season with salt, pepper, chilli powder, cumin and a little sugar. Finally, add some parsley and spring onion stems … and done!
