Ingredients:
3 tbsp gelatine
3 tbsp cold water
5 fl oz heavy cream (125g)
2 oz granulated sugar (40g)
8 fl oz coconut milk (200ml)
4 oz mango, cubed (100g)
4 oz pineapple, cubed (100g)
Finely grated coconut, for garnish

Instructions:
Stir gelatine into cold water in small bowl.
In a saucepan, bring heavy cream and sugar to a boil. Stir in gelatine mixture with a whisk.
Set aside to cool completely.
Pour coconut milk into the mixture.
Fill dessert cups with panna cotta mixture. Refrigerate until firm.
Place mango and pineapple in a saucepan and cook until all the fruit juice is gone. Set aside for 30 minutes to cool.
Top each panna cotta with 3 tablespoons of fruits.
Garnish with finely grated coconut.
