Amma’s Special Chicken Biriyani Recipe

Ingredients:
For the masala,
?Coriander powder – 2 tbsp
?Chilly powder – 2 tbsp
?Turmeric powder – 1tsp
?Pepper powder – 2 tsp
?Chicken masala – 1/2 tbsp
?Garam masala – 1 tsp
For the marination,
?Chicken – 12 pieces
?Ginger garlic paste – 2 tbsp
?Salt – to taste
?Sunflower oil – 1 tbsp
?Water – 2 tbsp
For the rice,
?Ghee – 1 tbsp
?Cloves – 4
?Sha jeera – 1/2 tsp
?Star anise – 2
?Cardamom – 4 to 5
?Bay leaves – 2
?Basmati rice – 4 cups
?Ghee – 3tbsp
?Garlic paste – 1 tbsp
?Green chilly paste – 2 tbsp
?Onion – 2 medium
?Tomato – 2 medium
?Coriander leaves – as required
?Curd – 2 tbsp
?Fried onion – of 2 medium onions
?Roasted cashews n raisins – as required
?Pineapple essence – 2 tsp + Turmeric powder – 1 tsp + Water – 3 tbsp
?Garam masala – 1 pinch each

Method:
?Slightly roast all the masala powders mentioned above. Using half of this roasted masala, ginger garlic paste and salt marinate the chicken pieces and keep it in the refrigerator for 30mins minimum
?Meanwhile heat ghee in a pan and add all the spices n let it splutter in low flame. Add washed basmati rice and roast slightly for 1min in medium flame
?Boil water in a biryani pot. Add sufficient amount of salt. Once it’s boiled well add the roasted basmati rice into it mix well and cook(half cooked)After that strain and keep it aside as shown in the video.
?Heat ghee in a biryani pot. Add garlic n green chilly paste saute till the raw smell goes off. Add onion, tomatoes n coriander leaves. Saute till the onion get translucent.
?Add balance roasted masala n marinated chicken pieces. Mix well. Add half cooked basmati rice, roasted cashews n raisins, coriander leaves n pineapple essence mixture as shown in the video. Cover it tightly with an aluminum foil and lid. Cook in high flame for 2 mins and then in low flame for 45 mins approximately. Done. Serve hot n enjoy.
