Here’s a simple and quick potato salad recipe that will be a crowd-pleaser at any BBQ. These are the ingredients you will need.
10 medium sized potatoes- boiled until tender
5 boiled eggs
1 – 1 1/2 cups of mayo (to your preference)
1 tsp lemon juice
1 tsp spicy brown mustard
2 stalks of scallion/ chive chopped finely
8-10 ounces frozen peas and carrots or canned
2 shadon beni/culantro/bandanya leaves
1 pimento pepper chopped finely
1 tsp sugar
1/4 cup chopped celery
salt
black pepper
