I am sharing my quick couscous salad recipe. This is one of my favorite salad recipes. It is very filling and healthy too. You can eat this healthy salad for lunch or dinner or whenever you feel hungry. Couscous is very versatile, you can add any vegetable of your choice or boiled chicken or turkey to it if you are a non-vegetarian. The quantities mentioned serve two people.
Ingredients
Couscous- 1/2 cup
Water- 1/2 cup
Salt- to taste
Bell peppers- half
Cucumber- Half small piece
Onion- 1
Green chilli- 1
Fresh coriander leaves- 1 teaspoon
Bolied Rajma/ Canned Red Beans- 1 tablespoon
Carrot- half small
Ingredients for Dressing
Olive oil- 1 tablespoon
Lemon juice- 1/2 tablespoon
Dijon Mustard-1 teaspoon
Honey- 1/2 teaspoon
Salt- to taste
Black Pepper- 1/4 teaspoon
Grated ginger- 1/2 teaspoon
