Chicken Tinga Recipe:
Poaching liquid for chicken
6 cups chicken stock or water
2 medium carrots peeled
1 onion cut in half
1 bay leaf
1 small leek (optional)
3 chicken breasts
For the sauce:
3 cups chicken stock
1 pound fresh or canned tomato
3-4 guajillo chilis
4 cloves garlic
1 tsp salt
1/2 tsp ground cumin
1 tsp fresh or dry thyme
2 tsp Mexican oregano
3 tbsp chipotle peppers
To finish:
3 tbsp oil
2 medium onions
Shredded chicken
The tomato and chili sauce
Salt and pepper to taste
