Easy Chicken Ramen Stir Fry
Ingredients
2 discs or 1 bundle of GF ramen
2 tbsp soy sauce
8oz pkg snow peas
1/2 cup sweet peppers, diced (bell peppers for a sub)
4 baby bok choy, chopped
8oz button mushrooms, sliced
pinch of salt & pepper
1lb @dartagnanfoods boneless/skinless chicken breast, sliced thin
1 tbsp olive oil
1 1/2 tsp garlic, minced
1 1/2 tsp ginger paste
Prep your chicken and veggies. In one pot make your ramen according to the directions, drain and set aside. In a large deep skillet add the olive oil, allow to heat up and add the chicken. Season the chicken with salt/pepper. Once cooked add the peppers, mushrooms and bok choy. Saute for a few minutes. Add the garlic, ginger, soy and snow peas. Toss well then add in the ramen. Mix well and enjoy!
