Sharing Chicken Potato Cutlets recipe as one of my favourite Iftar recipes. This batch lasts me for 2 weeks and is a staple during Ramadan. Here’s what you need:
– Butter – 3tbsp
– Boiled shredded chicken – I large chicken breast
– 1 medium onion finely chopped
– Garlic/ginger – 1 tsp each
– Green Onion – 3 finely chopped
– Cilantro – Handful finely chopped
– 4-5 Medium Mashed potatoes
– Salt – 1tsp
– Red Chillies – 1tsp
– Red Crushed Chillies – 1tsp
– Coriander – 1tsp
– Cumin – 1tsp
– Beaten egg as needed
– Breadcrumbs as needed
Method:
– In a heated pan, add butter then add finely chopped medium onion and sauté for a few min on medium heat
– Add ginger/garlic for sauté for a min then add shredded – chicken. Give it a good mix and turn heat to low so it does’t stick
– Now I am add green onions and cilantro – mix it well, stir for a few more mins and remove
– In a bowl, I have 4-5 medium sized mashed up potatoes
– To that, I am adding the chicken mix. It was still hot so I left it in for a few more minutes to cool off
– For seasoning, I am adding salt, red chilli powder, crushed chilli flakes, coriander and cumin
– Using hand, I am going to start mixing it all together until it’s evenly mixed
– I am making round shaped cutlets as shown in the video
– For coating, I am dipping cutlet in egg first then coating it with breadcrumbs
– Repeat steps for the rest
– Heat oil and shallow fry the cutlets on medium flame for 2 mins on each side until done
– Serve hot with your favorite sauce
