Kalmas is a Kannur special snack, Kalmas can be made with egg,chicken, beef and prawns.
The preparation is very simple, rice dough wrapped with a spicy chicken masala coated with chilli paste and shallow fried.
Ingredients
Chicken breast 1 lb, cooked with salt, pepper and turmeric powder
2 onions finely chopped
Ginger garlic paste 1 tbsp
Mild pepper paste 1 tbsp
Kashmiri chili powder 1 tsp
Turmeric powder 1/2 tsp
Garam masala 1/2 tsp
Chicken masala 1 tsp
Fennel seed powder 1 tsp
Salt to taste
Coriander leaves chopped 2 tbsp
Oil 2 tbsp
Rice flour(pathiri flour)2 cups
Shredded Coconut 1 cup
Shallots 8
Fennel seeds 1/1/4 tsp
Cumin seeds 1/4 tsp
Salt to taste
Boiled Water 2 cups or as needed
For Coating
Kashmiri chili powder 1 tbsp
Turmeric powder 1/4 tsp
Salt little
Water
Oil for frying
Curry leaves
Preparation
Pressure cook the chicken breast with little turmeric powder, salt and pepper powder. Once it’s cool shred them and set aside. Heat a pan and oily, sauté chopped onions, ginger garlic paste. I added mild pepper paste. You can add green chilies instead. Once everything sauté well.
Add in all spice powder sans mix it well. Add in the shredded chicken and salt and sauté once again till the whole mix is completely dry. Close the lid and cook for 5 minutes. Finally garnish with some coriander leaves and turn off the flame. Filling is ready.
Take a large bowl, add rice flour, salt, and crushed coconut mix, mix with your hand first , Add water little by little to make a smooth dough. Let the dough sit for 5 minutes
Make small balls of the prepared rice mix, pat them into small cups and add in the prepared chicken mix.
Seal in the sides and roll them again in the shape of unnakaya.
Next step is to steam the preoarddNow steam them for about 20 minutes over a moderate flame.
The next step is to make a batter with Kashmiri chili powder, turmeric powder ,salt and water. Roll the steamed kalmas in the batter and shallow fry them till they turn crispy on all sides.
