Paleo Salad – Roasted Pumpkin Salad with Za’atar Dressing Recipe
INGREDIENTS
100 g – spinach leaves, rinsed and drained
1/2 – small red onion, diced
150 g – roasted pumpkin/ squash
6 – cherry tomatoes sliced into halves
30 g -feta cheese, cut into cubes
For the dressing
2 tbsp – extra virgin olive oil
1 tbsp – fresh squeezed orange juice
1 tsp – za’atar herb blend
salt and ground black pepper to taste
INSTRUCTIONS
1. Heat the oven to 400 degrees F.
2. Remove the pumpkin’s skin and seeds.
3. Slice and spread on a roasting pan.
4. Drizzle with olive oil.
5. Place in the oven and roast for 30 minutes
until the pumpkin becomes tender.
6. Remove and let it cool.
7. Cut the pumpkin to bite size and place in a bowl with spinach, onion and tomatoes.
8. Season with salt and pepper to taste.
9. Place all the dressing ingredients in a small bowl.
10. Whisk quickly with a fork until becomes slightly thickened.
11. Pour the dressing over the salad ingredients and toss to coat evenly.
12. Add feta cheese on salad before serving.
