Chicken karahi, also known as chicken kadai or karahi chicken, is a popular North Indian and Pakistani dish. It’s a flavorful and spicy curry made with chicken pieces cooked in a wok-like pan called a “karahi” or “kadai.”
Ingredients:
500g chicken pieces
2 tablespoons cooking oil
1 onion, finely chopped
2 tomatoes or yogurt
1 tablespoon ginger-garlic paste
2-3 green chilies, sliced
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Heat the cooking oil in a karahi or a deep, heavy-bottomed pan.
Add the cumin seeds and let them splutter.
Add the finely chopped onion and sauté until it turns translucent.
Add the ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
Add the chicken pieces and cook until they turn white on all sides.
Stir in the chopped tomatoes, green chilies, coriander powder, turmeric powder, red chili powder, and salt.
Cover and cook on medium-low heat for about 15-20 minutes, or until the chicken is tender and the tomatoes have softened. Stir occasionally.
Once the chicken is cooked through and the oil separates from the masala, garnish with fresh coriander leaves.
Serve hot with naan, roti, or steamed rice.
