Ingredients ?
2 large bananas, ripe and spotty are best for this
40 pretzels – I use the square kind
3 – 4 tbsp peanut butter
1 cup vegan chocolate chips – I use Enjoy Life
1 tbsp melted coconut oil – You want refined coconut oil, not virgin. Otherwise you’ll taste the coconut
Directions
1. Slice the bananas into 20 thick slices. Place on a lined plate or cookie sheet and freeze until solid.
2. Combine the chocolate chips and coconut oil in a microwave save dish and heat in 10 second intervals, stirring between rounds, until melted and silky smooth.
3. Spread a thick layer of peanut butter on each pretzel, place a slice of frozen banana on top, and then close the sandwich with another pretzel. Press down gently to stick together.
4. Dip half of the sandwich into the now slightly cooled melted chocolate. Allow the excess chocolate to drip off and then place the sandwich on a lined plate or cookie sheet. Repeat with the remaining sandwiches and then freeze for 10 minutes to set.
If there are any leftovers, store in an airtight container in the freezer for about 3-4 days.
