Kattar Butter Chicken: Ingredients & Recipe Below:-
– Marinate 750 grams chicken with 2 Tbsp butter, 1.5 Tbsp smoked mustard oil, half Tbsp each of salt, red chilli powder, black pepper powder, Kashmiri red chilli powder, 3/4th tsp cumin powder, half tsp turmeric, 1 Tbsp ginger-garlic paste, half cup curd and 1 lemon juice. Let it sit for 30 minutes.
– Brush a non-stick pan with oil/butter and fry in the chicken pieces on high flame for 4 minutes turning sides then on medium high flame for 4 minutes turning sides. Keep the chicken pieces aside and in the same pan heat 3 Tbsp butter and 1.5 Tbsp oil.
– To this add in 1 Tbsp ginger-garlic paste and some finely chopped green chillies. Sauté on high for 45 seconds.
Dry roast 4 green cardamom, 1 tsp each of black peppercorns, salt, cumin seeds, 3/4th Tbsp coriander seeds on low flame for 2 minutes. Now add in 1.5 Tbsp kasoori methi and roast for another 20-30 seconds.
– To this add in 6 soaked Kashmiri red chillies, 6 boiled skinless tomatoes, 1 boiled onion and 1 tsp red chilli powder blending all of it together into a smooth paste. Add this paste in the pan and fry on medium high for 2 minutes then on medium for 3 minutes. Next add in 2 cups of water giving it a good mix and close the lid turning flame to low for 2.5 minutes.
– Now add in the fried chicken pieces mixing well and close the lid on low flame for 4-5 minutes. Next add in a cup of fresh cream mixing gently on low flame for 2 minutes. Garnish with roasted crushed kasoori methi.
