Chicken Vegetable Soup
Ingredients for Chicken Stock:
Chicken wings 300 g
Onion cubes 1 cup
Garlic pods 3-4
Black peppercorns 1 tbsp
Salt 1 tbsp
Water 2 ½ liters
Ingredients for Soup:
Oil 3 tbsp
Chicken chunks (boneless) 300 g
Chicken stock 1 ½ liters
Peas 1 cup
Carrot cubes 1 cup
Cabbage (chopped) 1 cup
Sweet corn 1 cup
Chili sauce 2 tbsp
Soy sauce 1 tbsp
Vinegar 1 tbsp
Black pepper crushed 1 tsp
White pepper powder 1 tsp
Slurry (corn flour 4 tbsp + water 1/2 cup)
Egg whites 3
Green onion (chopped) as required
Directions for Chicken Stock Preparation:
1. In a pot heat water and add chicken wings, onion cubes, garlic, black peppercorns, salt and boil for 20-25 mins or until stock is done. Remove the scum and separate the chicken from the stock.
2. Reserve the stock for later use.
Directions for Soup Preparation:
3. In a pot heat oil and add chicken. Cook until chicken changes color.
4. Now add chicken stock and mix it well. Add peas, carrot, cabbage, sweet corn and cook for 8-10 mins.
5. Now add chili sauce, soy sauce, black pepper crushed, white pepper powder, vinegar and cook for 2-3 mins.
6. Now add slurry and cook until it starts to thicken. Add egg whites and cook for 1 min.
7. Now pour the soup into the servings bowl and garnish it with green onion.
8. Your Chicken Vegetable Soup is ready. Serve and enjoy.
