Korean Salad Recipe [상추겉절이]


Here’s an easy Korean salad recipe! I’ve been making this a lot lately. I always crave something at night, so instead of snacking on something bad I’ve been making this salad instead. The sesame oil and sesame seeds add this nuttiness that is very satisfying. If you go to eat Korean BBQ you’ve probably seen this or some sort of version of it with your meal. This is how my mom makes it and I hope you try it out! 🙂

INGREDIENTS:

1 Romaine Lettuce or 1 Red Leaf Lettuce or whatever lettuce mix you prefer (about 4-5 cups)
Half English Cucumber
Half Medium Carrot
1 Green Onion Stalk
2 TBSP Soy Sauce
2-3 TBSP Sesame Seed Oil
Dash of Black Pepper
1/4 tsp – 1 tsp Hot Red Pepper Flakes
1/4 tsp garlic powder or 1 tsp of minced garlic
1-2 TBSP Sesame Seeds
*sugar (optional) I don’t add sugar to my sauce, but you can definitely add a little bit if you find it to be a little salty.

Wash and dry the romaine lettuce. Then cut them into bite size pieces. Cut the cucumber into thin diagonal slices. Cut the carrot into small thin strips. Cut the green onion into thin strips. In a large bowl, add the soy sauce, sesame seed oil, black pepper, hot red pepper flakes, and sesame seeds. Mix the sauce up. Add the lettuce, cucumber, carrot, and green onion. Mix it up well. Taste it and adjust it if needed. I added a little more sesame seed oil. You might need to add more soy sauce or oil depending on how large your lettuce mix was. Then you’re all set. Enjoy with your meal or just as is!
