Another easy, simple, and healthy cookie recipe – the Almond Florentines. I like them crunchy 🙂

OATMEAL RAISIN: http://youtu.be/6beNtNVyriA
Ingredients:
2 cups sliced, unbleached almonds
1/2 cup powdered sugar
1 egg white, at room temp.
pinch of salt
Directions:
Preheat over to 300º F.
Crush the almonds with your hands, into small uneven pieces. Whisk the egg white in a separate bowl until foamy. Add your sugar, salt, and almonds, and stir well, making sure the almonds are evenly covered in the egg. Spoon out the almond mixture onto a baking sheet lined with parchment paper (press down with a fork), about 3 inches apart, and bake for 10-15 minutes until golden brown.
Let cool for 5 minutes and if you’d like, you can drizzle with melted chocolate (I used semi-sweet chips). Enjoy!
