Easy Goan Pork Amsol | Pork Solantulem


Here’s a mouth-watering recipe for pork-fans! A Goan pork classic: ‘Pork Solantulem’
Deriving it’s name from the key ingredient — Kokum (Binda Solam in Konkani) this Pork Amsol is hot and sour and an absolute delight 😋 This can be an appetiser or a side, and it works wonderfully well with cabbage salads.

Ingredients:

700 grams Pork (with sufficient fat; remove the skin)
Salt as needed
1/2 teaspoon Turmeric powder
1 inch piece of Ginger
12 large Garlic cloves
6-7 Cloves
1 teaspoon Black Peppercorns
1 (flat) teaspoon Cumin seeds
2 inch stick of Cinnamon
2 Kashmiri Chilies (for colour)
2 Byadgi Chilies (for heat/spice)
2 Green Chilies
1 Tablespoon Goan Vinegar
2 medium-sized Onions, sliced
Tamarind juice (from a lemon-sized amount of Tamarind)
9 – 10 Kokum rinds (mine are super sticky, sour and juicy; if you have the dry sort you may need 12-14)
1 red Chili & green chili
1/2 teaspoon Sugar
