The new year is here and for many that means fighting off the indulgences of the holiday season. Yes, we celebrated and yes we enjoyed ourselves. Now that the new year has turned over, it is time to concentrate on getting back into healthier habits. With this in mind I am sharing with you my recipe for a delicious alternative to a mayo laden tuna salad. This avocado tuna salad is delicious and I promise you won’t even miss the mayo! This is creamy from the avocado, tangy from fat free Greek yogurt and it has crunch from fresh celery and a little heat from fresh green onion. I don’t know about you, but I hate fat free mayo, fat free cream cheese, or just about fat free anything. They are usually filled with fake ingredients and chemicals you can’t pronounce. I enjoy a tuna sandwich from time to time and when getting back on track, tuna is an easy option to reach for when taking lunch to work or getting lunch on the go. This salad employs avocado and yogurt to give you the creaminess you desire in your tuna salad and it does not disappoint.

I have used two cans of albacore tuna, packed in water. I have drained and flaked the tuna. The dressing is one half of a ripe avocado, mashed and mixed with 1/4 cup of good quality, fat free Greek Yogurt. I like the Greek God’s brand of yogurt. You can find it in both fat free and full fat. Your choice. If you are vegan you can always choose coconut yogurt or soy yogurt as your option.

I add celery and green onion for crunch and flavor, but this is also delicious with regular onion and bell pepper added. I know some people enjoy adding hard cooked eggs to their tuna salad and if that is something you enjoy, go for it. If you don’t like something I have added, simply leave it out. As for seasonings, I am using a bit of my homemade crazy salt blend, but you could just as easily use salt and pepper or a seafood seasoning such as Old Bay.

Mix this all together and add more yogurt and more avocado if you like it moister than I do. I do not like my tuna too loose. You should make yours the way you prefer.

I am serving mine on whole grain bread but you could turn this into an open faced sandwich or even a tuna melt by adding a slice of cheese and popping under the broiler. Are wraps more your style? Add this to a tortilla or low carb wrap or even a half of a whole grain pita pocket. If none of those strike your fancy then add a scoop to a brimming bowl of greens and veggies and enjoy with a drizzle of your favorite dressing.

The possibilities here are endless and the flavor is phenomenal. Getting back on track after the holidays never tasted so good. If you are not a fan of tuna, consider using canned chunk chicken to make a salad in this way. I think you will enjoy it equally.
