1. How to boil the eggs for asparagus avocado and tomato salad

But if you want to make the best asparagus and avocado salad, then everything should be cooked just how you like it.
This means you have to decide beforehand how you like eggs and boil them accordingly.
If you like them with a runny yolk, boil them for 4-5 minutes, and if you want an almost dry yolk, the boiling time is 6 minutes. For hard-boiled eggs, it’s 7-8 minutes.
You might have known that, but here’s a trick you probably didn’t know. Once the boiling time is up, place the eggs into an ice bath and let them cool for a few minutes. This will prevent them from cooking any further.
Next, you’ll need to peel them as soon as they’re out of the ice bath. This way, they will peel nicely without the bits that usually come off with the shell.
You can apply the same technique for any recipe with eggs, not just for the asparagus avocado and tomato salad.

2. How to cook asparagus for salad
You can blanch, sautee or grill it. I blanched the asparagus for this salad because I wanted to make it quick and easy.
You can, however, cook it any way you like it but it’s worth noting that grilling and sauteeing will extend the cooking time.
Furthermore, I blanched it in the same pan in which I boiled the eggs. If you use another method, you’ll have to cook it separately. This too will add up to the cooking time.
Blanching asparagus is super easy.
The first thing you need to do is to prepare an ice bath and keep it handy.
Then you need to boil water and scald the asparagus in it for about 2 minutes. And then you need to place it, as quickly as possible, into the ice bath and let it chill for a few minutes. This will halt the cooking process.
Next, you need to drain and place it into your delicious avocado and asparagus salad.

Of course, I am assuming that you want to keep this recipe Keto. If that’s not important for you, just add any of your favorites.
You can make it with bell pepper, broccoli, celery, cucumbers etc. Furthermore, you can replace the cheese. Parmesan and Pecorino are great in this avocado and asparagus salad recipe.
It’s worth mentioning that I haven’t used any dressing because I considered it simply didn’t need one. I like it with only a drizzle of olive oil and some vinegar, or lime juice.
But if you are the kind of foodies who simply can’t imagine a salad without dressing, then you should try the mustard and maple syrup dressing I made for this quinoa chopped salad.
It’s worth pointing out here that it won’t be a Keto recipe anymore because maple syrup is not Keto-friendly.
For meal prep, divide the avocado and asparagus salad into 4 airtight containers and refrigerate for up to 5 days. Keep in mind that you shouldn’t add oil and vinegar until just before serving.
