Today we have a Chicken Bombs Recipe, a.k.a. Jalapeno & Cheese Stuffed Chicken Wrapped in Bacon on Weber Kettle. That’s right today I’m cooking on a Weber Kettle Grill, the little Smokey Joe and making BBQ Chicken Bombs wrapped in bacon!
I’m doing this cook on the St.Mary’s river located just minutes from Folkston, GA. and the Okefenokee swamp.
For this recipe, we’ll take some chicken breasts, stuff them with jalapenos, tomatoes, mushrooms and cream cheese, then wrap in bacon. It doesn’t stop there, I’ll finish these stuffed chicken bombs with a BBQ glaze.
Ingredients
• 2 chicken breasts, butterflied and/or pounded thin
• ½ tomato, chopped
• 5 baby Bella mushrooms, chopped
• 1-2 jalapeno peppers, chopped
• 1/3 of an 8 oz block cream cheese, divided equally
• Heaven Made Products MexiCajun Seasoning to taste or your favorite seasoning
• 8 pieces of thin bacon
• 1/3 cup Pappy’s Moonshine Madness BBQ Sauce
• 1/3 cup Kentucky Bourbon
• 1/3 cup maple syrup
Recipe Instructions
1. Season the top of the chicken breast using the MexiCajun seasoning.
2. Mix the mushrooms, jalapenos and tomatoes together, then sprinkle on top of the chicken breasts.
3. Add the cream cheese.
4. Roll the chicken breasts up.
5. Wrap each chicken breast with bacon, slightly overlapping each piece.
6. Set up the Weber Kettle grill for 2-zone indirect heating and add 3 pieces of peach wood. Heat to 275 to 300 degrees F.
7. Place the chicken breasts on the grill on the indirect side and cook until about 155 to 160 degrees, then glaze – see step 9.
8. While the chicken is cooking, mix together the BBQ sauce, bourbon and maple syrup.
9. Glaze the chicken with the barbecue sauce and let cook for 10 minutes.
10. Turn the chicken over, glaze and cook until chicken is 165 degrees F.
11. Remove from the grill, let rest 10 minutes and serve!
