Easy Creamy Potato & Egg Salad Recipe / Potato, Bacon & Egg salad (Aussie Style)
Ingredients:
• 1 Kg Red skin potato
• 2 Rashes bacon finely chopped
• 2 hard- boiled eggs
• Salt to taste
• Pepper
• Egg mayonnaise
Method:
1. Take potatoes in a pot and add enough tap water to just cover the potatoes and add 1 teaspoon of salt.
2. Cook for 15 – 20 minutes until tender and drain all the water and let it cool slightly.
3. Take a non- stick fry pan and spray with cooking oil and fry the bacon till it gets crisp.
4. Take the bacon out and put on some paper towel.
5. Chop up the boiled eggs and put it in a bigger dish.
6. Now chop up the potatoes into bite size pieces and add to the dish with eggs.
7. Add cooked bacon to the dish with potatoes and eggs and give a quick mix.
8. Add enough mayonnaise and mix well to combine.
9. Add salt and pepper to taste and mix to combine.
10. Enjoy with your favourite meat or even on its own.
