INGREDIENTS
4 Chicken breasts
1 Bell pepper
1 Onion
4 Garlic cloves
5 Large mushrooms
1/2 Cup of light mozzarella
1/2 Cup of plain yogurt
Salt and pepper
Hot sauce
1/2 Tbsp Olive oil
METHOD
1. Cut bell pepper, onions, and mushrooms in slices.
2. Chop garlic cloves and grate mozzarella.
3. In a bowl, mix together 1/4 cup of yogurt, salt, pepper, and hot sauce.
4. At medium-high heat, cook vegetables until they are slightly soft.
5. In a medium sized bowl, mix cooked vegetables, mozzarella, yogurt, and salt and pepper.
6. Slice open chicken breasts.
7. Stuff chicken breast with vegetable mixture and use toothpick to keep chicken closed.
8. Spread 1/4 of yogurt mixture on chicken breast, repeat on all of the breasts.
9. Put chicken breasts on cooking sheet covered by parchment paper.
10. Cook chicken in over for 25 minutes at 350 degrees F.
