I get so many requests for low carb recipe ideas. So I have been doing some research around these requests and tried this delicious tomato basil chicken. I used to bake it in the beginning but since a lot of you ask for no-oven meals, this one comes together in a pan. I have used chicken breast over here and let me tell you with all my confidence that this is the softest chicken breast you will ever make. We all know how unforgiving chicken breast pieces can be when overcooked. But when you slow cook them this way with a delicious sauce as the base, it becomes something else altogether, almost magical.

A simple dish, with a very few ingredients, this is a low carb recipe I can eat. I hope you try it and love it as much as I do. This is a regular now. Just make sure the tomato sauce and basil are fresh. Because that is what makes all the difference. A little bit of extra effort in terms of time, but every bit of it is worth it!

Here are the ingredients:

500 g chicken breast
3 tbsp extra virgin olive oil, for frying the chicken
1 tbsp extra virgin olive oil, to make the sauce
1 tbsp butter (salted/unsalted, your choice)
1 egg
200 g bread crumbs
Salt to taste
2 tsp black pepper powder
950 g fresh red tomatoes
200 g grated cheddar cheese
8-10 fresh basil leaves
